So I saw this recipe and decided to give it a try. We had it for dinner tonight, and it was so amazingly good. (and easy too!)
Pork roast
2 small cans El Pato Tomato sauce (found in the Mexican food isle)
1 large can tomato sauce
2 1/2 cups brown sugar
Cook Pork roast in crockpot with about 1/4 cup water till tender. (I cooked my 4 lb roast on low for about 6 hours and then on high for about 2 and it was perfect.) Remove roast, drain juices, remove fat and shred. Dump the tomato sauces and brown sugar into the crockpot, stir together and add shredded pork back in. Cook a few hours more on low.
Serve with Rice:
(I made this in my rice cooker)
white rice (I used 2 cups)
chicken broth (I used 4 cups)
1 can green enchilada sauce
lime juice
cilantro, chopped
Cook rice in chicken broth. Mix 4 cups cooked rice with 1 can enchilada sauce. Add a little bit of lime juice and cilantro (amount depends on how much you like!)
Serve pork and rice on a flour tortilla along with black beans, tomatoes, lettuce, cheese, or whatever other toppings you like. Then drizzle with ranch (trust me it's good!)
And here is the recipe for dressing I used.
Cafe Rio Cilantro Lime Dressing
2 cup mayo
2 cup sour cream
10 spring of cilantro
1 package of ranch dressing
4 T salsa Verde (green salsa)
2 cloves of garlic
1/8 t Tabasco sauce
juice of one lime....
(that was the true recipe. this is what I did)
1 cup mayo
1 cup sour cream
cilantro to taste. I started by adding about 1/3 of a bunch.
1/2 package of ranch dressing
a couple of shakes of garlic powder (probably a teaspoon)
no Tabasco sauce (I didn't have any)
juice of one lime
salsa Verde... I didn't have any, so I actually used green taco sauce.
So the cilantro and the salsa Verde I just kept adding until it tasted right to me.

Saturdays game...
Before I get to the game, I had to share this picture. I came upstairs to open Bailee's door so when she woke up she'd come find me. I had to laugh, quietly, and then grab the camera. She had so many books on her bed! (and some that had fallen between the bed and the wall!) So cute. My 'rule' is that at nap time she has to go to her room, but she doesn't have to sleep. So she can read or play quietly, whatever she wants. If she's still awake after an hour and a half, she can get up. That almost never happens. Oh, and apparently she was hot and tried to take her shirt off, she has one arm out the neck hole.

At half time we ran down to pizza hut and had our traditional 'pre-game' pizza. So yummy. I can't wait for the UNLV game when we get to take Bailee and Mom and Dad will be here. For my dad's sake I hope UNLV puts up a fight...So this next picture is actually of Luke's cousin, Justin, kicking a field goal! We were excited for him, that's his first attempt of the season. Way to go! (we sat at the top of the stadium with the cousins, it's our favorite spot.)

Just One... and some ramblings
For the last month or so Bailee's favorite thing to eat is a slice of bread, or "Just One" as she calls it. She prefers it plain, and would eat just bread all day long if I'd let her. Almost every time we ask her what she wants to eat she replies, "Just one". I've been wondering where she picked that up from; it's cute but kind of random. Or so I thought. Bailee, as most young children do, repeats what I say and remembers a lot more than I give her credit for. So we were in Sacrament meeting on Sunday and as the bread came to our row, Luke leaned over to Bailee and said "Just one Bailee." I had an ah ha moment. We tell her that every week!
I don't believe I've posted this cute story; if I have, forgive me. :)
In August sometime we were at Wal-mart and all of the school stuff was on display. We walked past a row of scissors and Bailee said "Look, safety scissors". We had to stop and look at them. Mickey Mouse talks about safety scissors, so I knew that's where she picked it up from. So I asked her "Bailee, how did you get so smart?" She looked at me in all seriousness and said "I go to Grandpa's house to get smart." (Could it be that while at Grandpas house he lets her watch Mickey Mouse as much as she wants? Who knows)
Nothing new and exciting going on in our family. Just watching Bailee learn and grow up way to fast! She constantly amazes me. I'm so grateful to be able to stay home and play with her. Even on days like this when she wakes up early, doesn't take a nap, and walks around singing 'OOOOOO OOOOOO' or howling like a wolf non-stop. She's taught me a lot about being patient, trust, faith, and total innocence. I love it.
Tomorrow I have a Close To My Heart party. I'm really excited, I love doing parties and meeting new people. When I signed up 3 years ago I thought I'd try it out and pay for my own scrapping supplies. Now I absolutely love my classes and club and the ladies that come. It's a break for me and tons of fun (work's not supposed to be this fun). I haven't done a party in awhile so I'm happy to start that up again. I'm so excited about the new fall catalog, I can't wait to show it off!

BYU VS Wyoming
I will make my prediction early this week. BYU is coming off a huge win over UCLA last week, this week they have to a avoid a letdown.
Wyoming is 2-1 on the year. They are already 0-1 in the MWC, they got beat by Air Force. This will be their first road game of the year. They have two very good running backs Sedone and Moore. On defense, they will blitz from every where on the field. BYU will have to continue to protect Max Hall really well. BYU should win this game, the only way I see them losing is if they turnover the ball and can't stop the run.

BYU vs Washington
So, anyone who has watched a BYU game with Luke (especially a close one where 'Magic Happens') will know that you just can't capture the emotion in still pictures. But once again, I failed to have the video camera ready. And besides that, when Jake Locker ran in for that final touchdown, I totally missed it. (Bailee just had to go potty!)
But I was there for the blocked extra point attempt.
Hopefully some time this season I can get video footage of Luke celebrating.

BYU VS UCLA
Last week I was a little off, I still predicted BYU to win, even if it was because of a controversial call. All that matters is that BYU 2-0.
So here we go a big game this week. UCLA is 1-0, they had a bye last week. In UCLA's first game, it was the tale of two halves. They had 4 turnovers in the first half, but in the second half they were amazing. So we are hoping the UCLA team that played in the first half shows up. Their leading running back is injured and is still listed as questionable for the BYU game. A couple things BYU needs to improve on, stop turning over the ball. Also they need to improve their coverage in the secondary or they might be in trouble this week. The game is in Provo which might be a little more difficult for UCLA being their first road game of the year.
I think BYU wins this game 28-24.

BYU VS Washington
Here is my weekly guess of BYU game. I think last week was beginners luck, I was one point off. BYU did alright for their first game.
This week BYU plays at Washington. BYU is trying to break a streak, they have not won a road game against a BCS team since 2000. Sure many people would not consider Washington a BCS team talent. But they are a BCS team. They lost big last week to Oregon, so we will see what Washington does this week. They have a very talented quarterback Jake Locker, he is very mobile, and quick. BYU will have to keep him under control. BYU will also have to fix some of the mistakes they were making last week. (Turnovers, and blind side sacks). BYU will also have to be mentally prepared that they can win on the road, BYU is a better football team than Washington, the only way they will lose if they turnover the ball on offensive and don't control Jake Locker on Defensive. So what do I see happening,

Day 4....
Today was more work than play. Luke had a dentist appointment, and they wanted to do a "meet the dentist" visit with Bailee. Bailee loves to brush her teeth!

Day 3....
Today we went on a hike to the falls up Battle Creek Canyon. It was the first time we have taken Bailee on a hike. When we got out of the car she through her arms up and said "Let's Hike!" It was so cute. I don't think she knew that a hike was just like walking, only harder.
Bailee walked some of the way, and Luke carried her the rest. It's only like 1/2 mile so it was not too bad. (Coming down was even better)
Bailee really liked the waterfall. We sat and enjoyed it for a bit, and had a snack.


After nap time we took Bailee to see Kung Fu Panda. It was also her first time really going to a movie. (I think we went to a couple when she was a baby, but I'm sure she slept through them.) Her favorite part of the movie was the preview for Wall-E. Now she keeps asking me if we can watch Wall-E at home. She loves popcorn, and wanted to hold the bag. It was almost as big as she was! I was impressed, she sat through the whole movie and was so good! She really didn't like the fighting parts, but she did like the animals.
After the movie we went to the KSL Coaches show with Bronco Mendenhall. We had hotdogs and hamburgers, and got to listen to the whole show. Bailee got scared everytime everyone started to cheer. It echoed pretty good in the show room, so it made the cheering sound even louder.

Day 2 of our Vacation...
Luke has this week off, so we decided to do some fun things. Today we went to the Zoo! Bailee was so excited! Of course Mickey Mouse had to come. Oh yeah, and the lipstick.
There were a ton of monkeys, Bailee loved watching them. In one exhibit the monkeys were sitting right up next to the glass eating. She thought that was pretty cool.



The Ghost of the Bayou was there again this year. It didn't move while we were there, but Bailee seems to like reptiles, so she liked looking at it.

This elephant sneezes and squirts water, Bailee wasn't so sure she liked that.
After Bailee checked out the Rhino's, she insisted Mickey needed to see.

Ah, this was a favorite. These cougars were so pretty. I was pretty excited this one came so close. Bailee said "cougars, like cosmo?" Yeah, she knows what's up.
"Giraffe has a long neck, like me."

This Gorilla was using an old plastic container and scooping water out to drink. He was also wearing a piece of burlap on his head like a hat. Kind of funny.
Bailee had a hard time choosing what animal to ride, but finally settled on the Lion.
So the snakes were what Bailee got the most excited about. She loved them all. Here she is showing me how big this one is.
I really think if they'd let her get in with it, she would have.
They even have a snake slide...
The last event of the day was riding the Zoo Train.

We had so much fun today! Bailee loved looking at the animals, and showing the signs of most of them. She kept saying "Let's keep going." after looking at each animal for a moment. She also really liked watching the penguins jumping in the water, and the roosters that we kept seeing. She already wants to go back...

Onion Days...aka Labor Day
To start off our week of 'vacation', we went to Payson for the Onion Day's Parade. We were prepared for it to be chilly, but not quite prepared for it to be cold and wet.
Morgan and Jilyan live right on the parade route, and close to the start, so we got front row seats.

Bailee liked picking up candy and putting it in her bag. Though, like the rest of the kids, she was fighting Luke for it. :)
Nicole and her kids and Jana and Joe and their girls also joined us for the weekend. It was fun to spend time with them all. We all crashed at Morgan and Jil's Sunday night. Cousin Brad came down Monday morning for the parade.

Next, Bailee saw some real horse's, she was so excited!

Is there really only 1 song you can play on the bag pipes, or do they all just sound alike to me? But seriously, look at those clouds rolling in!
And then it rained on our parade. Luke got a bit crazy, I think some people thought he was drunk. Everyone who stayed out got soaked, Bailee and I were brave for a bit and then went in the house. Lucky for us, Jil has a big window that we could watch the rest of the parade on.
After the Parade we had a great bbq, an then everyone headed home. It was so fun to see you all this weekend. (and we missed those of you who couldn't make it.)
Next, Bailee saw some real horse's, she was so excited!
